How Wing Snob Was Born

Wing Snob started with a simple, passionate conviction: wings in the United States deserved better. In 2018, founder Marcus Delgado left his corporate career armed with family recipes, secret spice blends, and an obsession for the perfect crispy-juicy ratio. What began as a weekend pop-up at the West Chicago Farmers Market quickly became a full-scale wing snob phenomenon.

The wingsnob philosophy is simple: never compromise. We source only fresh, never-frozen wings. We craft every sauce from scratch. We fry to order, season with intention, and serve with pride. Today, Wing Snob is a beloved destination across Illinois and beyond — but our roots, our standards, and our love for the perfect wing have never changed.

From a humble farmers market pop-up to a multi-location wing snob empire — here's how we grew.

2018 — The Beginning
First Pop-Up at West Chicago Farmers Market

Marcus Delgado sets up a folding table with 6 sauce varieties and a borrowed fryer. The line stretches around the block. Wing Snob is born.

2019 — First Location
Opening of West Chicago Flagship

200 W North Ave becomes home. Our first brick-and-mortar opens with 20 seats and a waiting list on day one. Food critics take notice.

2020 — Recognition
Named "Best Wings in Illinois" by Midwest Food Magazine

Despite a challenging year, Wing Snob thrives. We pivot to delivery, launch our online ordering platform, and earn our first major food award.

2021–2022 — Expansion
6 New Locations Across Illinois

Chicago, Naperville, Aurora, Elgin, Joliet, and Rockford — Wing Snob spreads its wings. The franchise program launches with our first franchisee partners.

2023–Present — Going National
Expanding Beyond Illinois

Wing Snob enters Indiana, Wisconsin, and Missouri markets. Our sauce line hits retail shelves. We cross 50,000 loyal customers — and we're just getting started.
